Day 2 of Fed and Fit
It's happening. Here is what my bedside table looked like -
(I did remove the sweets).
Day 1
with the
Fed & Fit Project
. It was easy and hard. I was home so cooking was not rushed, however, making hash browns from scratch is messy and time consuming. I do not see how I can do that in a normal day as I am balancing the kids and heading out the door for work. I think I would have to really prep that as it took forever to cook those potatoes. They sure taste great at the end.
My menu was breakfast - Sausage & Tomato Frittata with hash browns and fruit. I had to move the ingredients around as my family doesn't eat egg dishes (only me). So all the goodies that were going into the frittata, I placed in the hash browns so we had a sausage hash browns. The kids had the 'in scope' fruit as I do not enjoy fruit at all. At least I think those fruits are in scope but I'm not eating them so I didn't really focus on it.
I was so full from breakfast and by the time it was cooked and eaten... well it was 11:00 am so I skipped lunch as I was full. We headed to the movies so I ate a handful of gummy candies. I am sure that was not on the recommended menu.
Dinner was popped into the crock pot earlier and so we had antelope roast (pork tenderloin just sounded gross yesterday) with parsnip mash. I cooked carrots, parsnips and potatoes in the crock pot so I just 'riced' them and dinner was served with a green salad. For some reason - I feel like I am missing pieces of food. I know grains are not on the menu but I am missing green salad so I added it.
I exercised and missed my 10,000 steps by a few. I have drank tons of water and hope that helps get things rolling. I jogged in place as I watched a Netflix show as going out in the cold sounded like torture.

Day 2
is easy -
leftovers
Seriously leftovers never sounded so great but not having to cook... leftovers sounds fabulous. As we had leftovers from yesterday, I placed in serving sizes and off my husband and I went with meals for the day. My daughter has placed tonight's meal in the crock pot so dinner will be a breeze. I am behind on my step count but should be able to get it completed tonight as I head to the mall to find a Sadie Hopkins Dance Dress. I also need to complete the exercise component. The sleeping part is interesting as I log that in my daily sheets. Never gave much thought to my sleep before.
P.S. I missed the window of time that Fed & Fit opened to be part of their accountability and email motivation - it was open Christmas Eve and closed Christmas Day - I consciously choose to not be in email during my family time so I missed out on that element. I thought it was a strange day to open and close the opportunity.
